SCOTCH FANS (SHORTBREAD) 
1 c. butter
1/2 tsp. salt
3/4 c. light brown sugar, firmly packed
2 1/4 to 2 1/2 c. unbleached flour

Blend butter and salt. Add brown sugar, beating until smooth and creamy. Add flour to form stiff dough. Divide into 6 parts. shape each into ball. Place 2 balls on ungreased cookie sheet. Pat into circle 1/4 inch thick. With tines of fork, score edge. With tines, prick outlines of pie shaped wedges; score lightly with knife. Bake at 300 degrees for 30 to 35 minutes until golden brown.

Repeat, with remaining balls. While warm, cut along lines but not all the way through. Cool. Break into wedges. Store in tight box.
