MOM'S SCOTCH SHORTBREAD 
2 sticks butter, softened
3/4 c. powdered sugar
2 c. flour

Preheat oven to 325 degrees. Mix butter and sugar together until smooth. Add flour a little at a time and mix together. If crumbly, work dough together with hands. If dough is too soft chill for 10 to 15 minutes. Work with 1/2 of dough at a time.

Roll on a floured surface until about 1/4 inch thick. Cut with cookie cutters. Place on ungreased cookie sheets. Prick holes in cookies with fork. Bake at 325 degrees for 20 to 25 minutes or until golden on edges. Sprinkle sugar over cookies on cooling rack. Important: Keep in airtight container.
