BLUEBERRY MUFFINS 
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 c. shortening
1/2 c. milk
1 egg 1/2 tsp. lemon extract
1 c. fresh or frozen blueberries.

Sift together first four ingredients. Cut in shortening. Combine milk, egg, and lemon extract. Add to dry mixture stirring just until all ingredients are moistened. Add berries and spoon into muffin tins. Bake at 400 degrees for 20 to 25 minutes. Makes 1 dozen muffins.
