SPINACH SOUFFLE 
1 pkg. chopped spinach
4 oz. cream cheese
1 lb. cottage cheese
3-4 eggs, beaten
1 c. Parmesan cheese

Boil spinach. Mix cream cheese, cottage cheese, beaten eggs and Parmesan cheese. Add spinach. Bake at 350 degrees for 30 to 40 minutes. Top with Mozzarella cheese. Bake until it browns.
