CURRIED GOAT 
2 lbs. goat meat, cut into sm. pieces
1 c. lemon or lime juice
3 tbsp. oil
3 cloves fresh garlic, chopped
3 med. potatoes, diced
1/2 c. curry powder
1 onion, chopped
Salt, black pepper, and red pepper to taste

Wash meat and soak in 1 cup lemon or lime juice overnight. Squeeze out marinade. Use heavy pot with high flame to heat oil. Add garlic and curry powder and cook until brown. Add goat meat and 3 cups of water. Simmer until tender, adding more water, if needed. Add all other ingredients. Sauce should be slightly thick when finished. Serve over rice.
