EASY CHICKEN PARMESAN 
4 chicken breasts, boneless, cooked
Egg, stirred
Parmesan cheese
Parsley flakes
Garlic, ground to powder
Salt and pepper to taste
1/2 lb. Mozzarella cheese
Bread crumbs/crackers
2 tbsp. butter
2 tbsp. olive oil
Onion, chopped
Garlic clove, minced
1/2 tsp. oregano
1 to 2 (4 oz.) cans tomato sauce

Roll crumbs/crackers with rolling pin to make a coarse flour. Add Parmesan cheese (about half of amount of flour), parsley, ground garlic, salt and pepper; mix well.

Pound breast lightly; dip in egg, then coat with above mixture. Let sit 15 to 20 minutes. Brown quickly in butter/oil on med-high heat until brown. Place in casserole/baking dish.

Spread grated Mozzarella and Parmesan cheese over chicken.

Mix tomato sauce, garlic, onion, oregano, salt and pepper together; pour over chicken and cheese sauce should completely cover food.

Bake at 350 degrees for 1 hour.
