GRAPE JELLY 
VARIATION 1:

3 1/2 lbs. grapes
1 1/2 c. water
1 box pectin
7 c. sugar

Crush grapes, add water and simmer, covered, 10 minutes. Strain and measure out 5 cups juice. Add pectin and bring to a boil. Add sugar all at once and boil 1 minute. Skim off foam and pour into jars. Adjust caps and process in boiling water bath 10 minutes. Makes 8 cups.

VARIATION 2:

1 (6 oz.) can thawed frozen grape juice concentrate
2 c. water
1 box pectin
3 3/4 c. sugar

Mix pectin, concentrate and water in pan. Stir constantly over high heat until bubbles form around the edges. Add sugar, bring to a boil and boil 1 minute. Remove from heat and skim off foam. Pour into jars and adjust caps. Process in a boiling water bath 10 minutes. Makes 4 cups.
