1 c. butter 3/4 c. cornstarch 1/3 c. powdered sugar 1 c. flour ICING: 3 oz. cream cheese 1 c. powdered sugar 1 tsp. vanilla (or 1/4 tsp. other extract such as peppermint, almond) Food coloring For Cookies: Beat butter at low speed until creamy. Slowly add cornstarch and powdered sugar. Turn speed to medium and beat until fluffy. With wooden spoon, stir in flour. Dough should be quite soft. Cover and chill for 45 minutes to 1 hour. Now, prepare icing by blending cream cheese and powdered sugar until creamy and smooth. Mix in extract and coloring as desired. Next, roll dough into 24 inch balls. Place 1 1/2 inches apart on ungreased cookie sheet. With finger, press a slight indentation on top of each cookie. Bake at 350 degrees for 10 to 12 minutes until cookies feel firm but are not browned. Cool. Top each cookie with spoonful of icing. |
