SWEDISH PANCAKES 
3 eggs
1 c. flour
2 c. milk
1 1/4 tsp. salt
1 tsp. sugar
2 tbsp. butter, melted and cooled

Beat eggs. Then mix with flour until smooth. Add a little milk if batter is sticky. Mix in the rest of milk, plus salt and sugar. Beat until batter becomes smooth. Beat in butter. Leave batter to rest 1/2 - 2 hours. After rest, beat again and periodically while making pancakes. Heat flat skillet to medium heat, put in drop of butter, and pour thin layer batter. Turn pancakes when dry and bubbles appear on top. Color should be golden brown. Top pancakes with favorite fresh fruit and whipped cream. For 4.
