WHOLE WHEAT ZUCCHINI BREAD | |
2 cups whole wheat flour 1/2 cup high gluten flour 1/2 cup soy flour 1 tsp. salt 1 tsp. baking soda 3 tsp. ground cinnamon 1/4 tsp. baking powder 3 eggs, beaten 1 1/2 cups white sugar 3 tsp. vanilla extract 1 cup vegetable oil 3 cups grated zucchini 1 cup chopped walnuts (optional) Preheat oven to 350°F (175°C). Sift together flours, salt, baking soda, cinnamon and baking powder. Set aside. In a large bowl beat eggs. Add sugar, vanilla and oil, mixing well. Add zucchini to egg mixture. Add dry ingredients, mixing well. Stir in nuts if desired. Pour into 2 ungreased loaf pans. Bake at 350°F (175°C) for 45 minutes to 1 hour. Makes 2 loaves. Submitted by: Dawn |
