TASTY HARD CANDY | |
1 c. Karo white corn syrup 2 c. sugar 1/2 c. water Combine sugar, corn syrup and water. Cook to 300 degrees on candy thermometer, approximately 1 hour, in heavy saucepan. Do not stir while cooking. Remove from heat. Add desired food coloring and 2 teaspoons oil (flavoring of your choice, such as peppermint, cinnamon, clove, etc.). Pour into buttered pie pan. Butter fingers. Cut candy into bite-size pieces with scissors as soon as it can be handled. Work outside to center of pan. Keep turning pan. Roll in powdered sugar as cut. Work fast. It cannot be cut after it hardens. |

I make 4-7 batches of hard candy every week. That is why I stress the safty issue so strongly.
1st when adding color,flavoring or oil, be very careful and keep face back as it steams and can choke or burn you.
2nd the mixture is scalding hot and one small size spill on your body or clothing will scar you for life.
When beginning be slow and safe you can always poor out on lightly buttered cookie sheet and crack it instead when cool. After making 1st time you will know how to handle it better.
Also if using flavoring (cherry,carmel, etc.) instead of oils, double the amount.
