V-8 JUICE (FOR CANNING) 
1/2 bushel tomatoes
3 bell peppers
3 large onions
3 to 4 stalks celery
1 1/2 cups sugar or honey
1/4 to 1/3 cup salt
the juice of 3 lemons or 1/2 cup lemon juice concentrate

Slice all vegetables and boil until you can run them through a sieve. Add honey and salt. Mix well and pour into canning jars. Process for 20 minutes in a boiling water bath.
