TOMATO JAM 
2 c. skinned, chopped tomatoes
2 c. sugar
1 stick cinnamon

Stir all together and bring to a boil. Reduce heat and add 1 small lemon, diced. Continue cooking and stirring over medium heat until of desired consistency. You can drain off the excess water as it is cooking. Pour into jelly jars and seal with hot wax.
