TWICE BAKED POTATOES CASSEROLE 
6 to 8 med. potatoes
1/4 c. butter
2 c. shredded Cheddar cheese
1 1/2 c. sour cream
1/3 c. green onion (optional)
1 tsp. salt
1/4 tsp. pepper

Cook potatoes until boiling in skin (like you do for potato salad). Chill until cool enough to handle and peel skins. Grate potatoes. Melt butter and Cheddar cheese together. Add sour cream, green onions, salt and pepper. Pour ingredients into 2 quart casserole. Bake at 350 degrees for 30 minutes. Serves 6 to 8.
