DATE BRAN BREAD 
3/4 lb. diced dates
1 1/2 c. boiling water
4 egg whites
3/4 c. ripe mashed banana
1/4 c. white grape juice
1 1/2 c. whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1 c. whole wheat pastry flour
1/2 c. soy flour
1 tsp. vanilla
2 c. Miller bran
1 c. chopped walnuts

Place the dates in a bowl, pour the boiling water over the dates. Preheat the oven to 350 degrees. Beat the egg whites and combine with banana and grape juice until smooth. Sift together whole wheat flour, baking powder and baking soda. Fold 1 cup of whole wheat mixture into the egg mixture. Fold in 1/2 of the dates, half the soaking water and remaining flours and vanilla. Stir in the remaining whole wheat mixture, remaining dates and water, bran and walnuts. Pour mixture into a 10 inch tube or loaf pan sprayed with Pam and floured with whole wheat flour. Bake 50 minutes or until done. Cool on pan for 20 minutes.
