BASIC CHICKEN CASSEROLE 
2 lbs. chicken breasts (or 1-2 1/2 lb. chicken)
2 (10 oz.) pkgs. frozen broccoli
2 cans undiluted cream of chicken soup
3/4 to 1 c. mayonnaise
1 1/2 to 2 tbsp. lemon juice
1/2 tsp. - 1 tbsp. curry powder (to taste)
2 c. sharp Cheddar cheese, grated
Soft buttered bread crumbs
Grated Parmesan cheese
Paprika

Boil chicken until tender. Skin, bone and cut into pieces. Should make 1 1/2 to 2 cups of chicken.

Cook broccoli and cut into pieces.

Combine soup, mayonnaise, lemon juice and curry.

In a buttered casserole, layer the chicken, broccoli, sauce and cheese. End with cheese and top with bread crumbs. Sprinkle with Parmesan and paprika. Bake, uncovered, in a 325 degree oven for 30 to 40 minutes.

Serves 6 to 8.
