PEANUT BUTTER COOKIES
1 c. butter
1 c. white sugar
2 eggs
1 c. brown sugar
2 c. oatmeal (quick)
1 tsp. vanilla
2/3 c. peanut butter
2 c. flour
1 tsp. baking soda

Cream butter, peanut butter, white and brown sugars and vanilla. Add eggs, soda, flour and oatmeal. Mix well. Drop by teaspoonfuls onto greased cookie sheet; press down with fork. (Dough is a little sticky, so I dipped a glass in flour and pressed mine flat with that). Bake at 350 degrees for 8 to 10 minutes.

ICING:

4 c. powdered sugar
3/4 c. milk
1 1/4 c. peanut butter
1 tbsp.. vanilla

Mix until smooth (I had to use a little more powdered sugar because it was a little runny). Just add until you think it is the right consistency for spreading. Spread on cooled cookies.

The icing also makes an excellent peanut butter topping for ice cream. Do not add anymore powdered sugar if you are going to use as ice cream topping.
