PEACH COBBLER 
6 c. fresh ripe peaches
1/2 c. butter
1 1/2 c. sugar
2 tbsp. flour
1 tsp. lemon juice
1 1/4 tsp. cinnamon
1 tsp. vanilla
Your favorite pastry or pie crust

Mix together 1/8 cup sugar and 1/4 teaspoon cinnamon and set aside. Preheat oven to 400 degrees. Place peaches and 1/4 cup of the butter in a large pan over medium heat. In a small bowl, combine sugar, flour and add to peach mixture. Stir in lemon juice, cinnamon and vanilla. Stir until mixture comes to a full boil. Reduce heat and simmer for 15 minutes. Pour hot mixture into casserole dish. Roll pastry dough, cut into 1/2 inch wide strips, criss cross over hot peach mixture. Sprinkle with cinnamon and sugar mixture and dot with slices of butter. Bake 15 minutes and serve warm. Also good cold.
