SOURDOUGH PANCAKES 
1 c. sourdough starter
1 c. milk
1 c. unsifted flour
2 eggs
1 tbsp. sugar
1 tsp. baking soda
1 tsp. salt
3 tbsp. oil or melted shortening

The night before serving pancakes, combine starter, milk, and flour in mixing bowl; mix until smooth. Cover and let stand overnight or about 8 hours.

In the morning, stir in eggs. Combine sugar, soda and salt; stir into batter along with oil. Cook on hot 375 degree griddle.

For waffles, increase oil to 1/2 cup. Cook as directed on waffle iron.

This is my go-to recipe for pancakes and waffles. I do add a teaspoon of extract and a teaspoon of my spice mix (ginger, cloves, allspice, cinnamon, nutmeg). Great served with honey and whipped cream.
