BROWN RICE SALAD 
1 c. brown rice
2 1/2 c. water
1 tsp. salt
1 tbsp. oil
1 c. diced celery
1/3 c. pecans (or other), chopped or whole
1 c. fresh pineapple chunks
1 tbsp. sliced green onion
2 c. diced cooked turkey or chicken, or ham
1/2 c. mayonnaise
1/4 c. sour cream
1 tbsp. lemon juice
1/4 tsp. salt
Dash of sweetener if desired

Bring salted water to a boil. Add rice and oil. Cover with tight lid and cook over low heat until rice is tender and all the water is absorbed, approximately 40 minutes. Chill. Add celery, nuts, fruit, onion and meat. Toss together.

Beat mayonnaise, sour cream and seasonings together. Pour over rice mixture and blend well. Keep refrigerated until serving time. Serve on fresh greens and garnish with tomato wedges or green grapes. (I love lots of green grapes in the salad!)
