KOTA KAPAMA 
1 (4 lb.) chicken
1/4 lb. butter
1/2 c. tomato paste
1 1/2 c. boiling water
Juice of 1/2 lemon
1/4 c. wine
1 tsp. cinnamon
Salt and pepper

Cut chicken into serving pieces and sprinkle with lemon juice, cinnamon, salt and pepper. Brown chicken in butter.

Mix tomato paste with water in large saucepan; bring to boil, reduce heat and place browned chicken in tomato. Pour butter through strainer over chicken and tomato. Add wine and cook about 1 hour until chicken is tender. This chicken is very good served with macaroni, rice or potatoes.
