CARROT CAKE 
2 c. sugar
1 1/2 c. oil
4 eggs
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 junior size jars baby food carrots
1 1/2 c. nuts

Cream together sugar, oil and eggs. Add dry ingredients and mix well. Stir in baby food and nuts. Pour into a greased 13 x 9 inch baking pan. Bake at 350 degrees for 40 minutes. Frost with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

1 stick butter
1 (8 oz.) cream cheese, softened
1 lb. powdered sugar
1 tsp. vanilla

Mix together and frost cooled cake.
