TAMALE PIE 
CORNMEAL BASE:

2 1/2 c. boiling water
1 tsp. salt
1 c. cold water, yellow cornmeal

MEAT SAUCE:

1 lb. ground beef
1/2 c. chopped onion
1/2 c. chopped green pepper
1 clove garlic, minced
1 (16 oz.) can tomatoes
1 (7 oz.) can whole kernel corn, drained
1 tbsp. chili powder
1/8 tsp. pepper
1/3 c. yellow cornmeal
1/3 c. water
1/2 tsp. salt
1/2 c. chopped olives
1 c. shredded Cheddar cheese

BASE: Boil water in saucepan. Combine remaining ingredients. Slowly pour into boiling water, stirring constantly. Return to boil, stirring constantly. Cover and cook 5 minutes. Pour into well-greased or buttered 11 3/4 x 7 1/2 inch baking dish. Line bottom and sides of dish with cornmeal mixture.

SAUCE: Brown beef, onion and garlic. Drain and add vegetables and seasonings. Cover and simmer 10 minutes. Blend cornmeal with water, stir into meat mixture. Cook until boil and thickens. Stir in olives. Pour meat mixture onto cornmeal base. Bake 20 minutes at 350 degrees, sprinkle cheese in diagonal rows over top of casserole. Bake 5 minutes.
