CREAM OF FRESH BROCCOLI SOUP | |
1 1/2 c. chicken broth 1/2 c. chopped onion 2 c. cut broccoli 1/2 tsp. dried thyme 1 sm. bay leaf Dash garlic powder Salt and pepper to taste 2 tbsp. butter 2 tbsp. flour 1 c. milk In saucepan combine chicken broth, onion, broccoli and seasonings. Bring mixture to boiling. Reduce heat, cover and simmer 10 minutes. Place 1/2 vegetable mixture in blender or food processor. Blend 30 to 60 seconds or until smooth. Repeat with remaining vegetable mixture. Set aside. In same saucepan, melt butter - blend in flour, salt and pepper. Add milk all at once. Cook and stir until mixture is thickened and bubbly. Stir in blended vegetable mixture. Cook and stir until soup is heated through. Serves 3-4. Yield: 3 1/2 cups. |
