SKILLET HASH 
4 c. chopped or ground (leftover) beef
2 c. chopped cooked (leftover) potatoes
1 c. chopped onion
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. sage
1/2 c. meat juice or leftover gravy
1/4 c. bacon fat (I use vegetable oil)

Mix meat with everything but the bacon fat or oil. Heat the bacon fat or oil in a heavy skillet, add hash and fry slowly over low heat until brown and crisp.

Makes 4-5 servings.
