1 med. eggplant
1 boiled potato
1 egg
2 tbsp. milk
1/2 c. self-rising flour
1/4 c. chopped onion

Peel and cube eggplant. Cook in small amount of water until tender, drain. Mash eggplant and potato. Mix in remaining ingredients. Fry in hot oil until brown on both sides.
