BAKED CARROTS DIVINE 
1 lb. carrots
1/4 c. mayonnaise
2 tsp. minced onions
1 tsp. horseradish
Salt & pepper to taste
3 tbsp. finely crushed Ritz crackers
1 tbsp. butter

Preheat oven to 375 degrees. Cook carrots in boiling salted water until tender.

Save 1/4 cup of cooking liquid. Cut carrots lengthwise in narrow strips. Place in 9 inch square baking dish. Set aside.

Mix 1/4 cup cooking liquid with mayonnaise, onion, horseradish, salt, pepper. Pour over carrots and sprinkle with cracker crumbs. Dot with butter. Bake 20 minutes. OR, microwave on high 6 minutes, then oven for 5 to 10 minutes to crisp crumbs.

Since microwave ovens vary in power, you may need to adjust your cooking time.
