BLACK EYED PEA SALAD | |
3 tbsp. vinegar 1 tbsp. olive oil 1 tsp. sugar 1/8 tsp. each salt and pepper 2 c. drained canned black-eyed peas 1/2 diced celery 1/4 cup cilantro, chopped 1/4 cup red pepper, diced 1/4 cup green bell pepper, diced 1/4 cup onion, diced Combine first 4 ingredients in a bowl and mix. Add the peas and the rest of ingredients. Cover and chill for at least 2 hours. Serves 3-4. |
