CARROT CAKE 
2 c. sugar
4 eggs
1 1/2 c. oil
2 c. flour
3 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
2 tsp. vanilla
3 c. grated carrots

Mix and blend first 8 ingredients. Add carrots.

Bake in 3 layer pans for 30 minutes at 350°F or one 9 x 13 pan for 45 minutes.

Icing (This Is The Best Part):

1 stick butter
1 (8 oz.) cream cheese
1 box powdered sugar
1 c. nuts

Blend together.
