FRESH APPLE CAKE 
3 c. diced apples
1 c. sugar
1/2 c. cooking oil
1 1/2 c. self-rising flour
1 tsp. baking soda
1/2 tsp. nutmeg
1 1/2 tsp. vanilla
1/2 c. yellow raisins
1 egg
1 tsp. salt
1 tsp. cinnamon
1/2 c. chopped pecans

Mix apples and sugar together; set aside approximately 20 minutes, then add remaining ingredients. Mix well by hand. Pour into greased and floured oblong cake pan.

Bake at 350°F for approximately 1 hour or until toothpick comes out clean. This batter will be quite thick.
