EGGPLANT PARMESAN 
1 med. eggplant
1 c. flour
3 eggs, beaten
1 1/2 c. Italian flavored bread crumbs
Olive oil
1 1/2 c. tomato sauce
1 lb. Mozzarella cheese, sliced
Basil
Parmesan cheese

Slice eggplant 1/4" thick. In 3 separate bowls put flour, eggs and bread crumbs. Dip eggplant in flour, then egg, then bread crumbs. Fry in olive oil until browned. Layer between paper towels; set aside until all eggplant is fried.

Line a 13"x9"x2" baking dish with heated tomato sauce, then eggplant. Layer cheese, sprinkle with basil and Parmesan cheese. Repeat tomato sauce, eggplant, cheese, 2 times, ending with basil and Parmesan cheese. Bake at 350 degrees for 25 to 30 minutes. Remove from oven. Return to oven for 10 minutes before serving.
