STRAWBERRY CAKE 
3 c. sifted cake flour
1/2 tsp. baking soda
3 eggs
1 1/2 c. buttermilk
2 c. sugar
1/2 tsp. salt
1 c. Crisco
1 tsp. vanilla

Beat sugar, Crisco and eggs together. Sift together flour, soda, and salt. Add vanilla to sugar mixture, then add flour mixture alternately with buttermilk. Bake at 350 degrees. A regular pan may not be large enough. Cooking time will vary according to pan size. Check after 25 minutes.

When cake is cool, poke holes in with a fork. Pour strawberries and juice over cake. Top with icing.

ICING:

1 1/2 boxes powdered sugar
1 block cream cheese
1/2 stick butter
1 tsp. vanilla

Mix icing on high speed until well blended. Spread on cake.
