EASY-DOES-IT QUICHE 
2 1/2 to 3 c. leftover or 6 oz. pkg. chicken-flavored stuffing mix
1 c. chopped turkey or chicken, cooked
1 c. shredded Swiss cheese
4 beaten eggs
1/8 tsp. pepper
1 (5 1/2 oz.) can evaporated milk

If using stuffing mix, prepare as directed. Press stuffing (cooled) into a 9- inch pie plate or quiche dish, forming crust. Bake at 400 degrees for 10 minutes.

Meanwhile, combine meat and cheese. In another bowl, beat together eggs, milk and pepper. Sprinkle meat-cheese mixture into hot crust. Pour egg-milk mixture on top. Lower oven temperature to 350 degrees. Bake 30 to 35 minutes or until center is set. Let stand 10 minutes. May have to use two pie plates, also can be made a day ahead of time and reheated.
