SWEET POTATO NUGGETS | |
3 c. cooked yams or sweet potatoes 1/4 c. butter 3/4 c. brown sugar 2 tbsp. milk 1/4 tsp. salt 1/2 c. lemon peel, grated 1/2 c. black walnuts, chopped 8 marshmallows 1/2 c. Corn Flakes, crushed Mash sweet potatoes; add butter, sugar, milk, salt, lemon peel and nuts. With a tablespoon, scoop up about 1/4 cup of mixture. Center with a marshmallow. Cover with potatoes. Shape into balls. Roll each ball in Corn Flakes. Place in buttered baking dish. Makes 8 balls, cover, label and freeze. Bake until marshmallow oozes, about 30 minutes. |
