RED BEANS AND RICE 
1 bag red beans
1 lg. onion (diced)
1 green pepper (diced)
Garlic powder
Chili powder
Black pepper
Creole Seasoning or Old Bay Seasoning
Italian Sausage or Polish Sausage
White rice, cook according to pkg.

Wash red beans, put in pot and cover with water (optional - add 1 teaspoon of baking soda). Bring to a boil, boil 3 to 5 minutes. Drain water from beans and rise in a colander. Put back in pot and add onions, green pepper, garlic powder, chili powder, black pepper, creole seasoning, and sausage. Cover with enough water to simmer. Simmer 2 to 3 hours or until beans are soft.

Serve over white rice with corn bread.
