This succulent pork kebab is an Indonesian specialty. Peanut butter, soy sauce and curry are combined to make a wonderful blend of flavors in both the marinade and dipping sauce. Serve it with hot rice and a lettuce and citrus salad. For 4 servings you will need: 1/2 c. soy sauce 1/4 c. creamy peanut butter 2 tsp. brown sugar 2 tsp. curry powder 2 tbsp. lemon juice 1/3 tsp. crushed red pepper 1 clove garlic, minced or pressed 1 1/2 lb. cubed pork loin Dipping Sauce (recipe follows) 1. In a large bowl, blend soy sauce with peanut butter. Stir in brown sugar, curry powder, lemon juice, red pepper and garlic. 2. Add pork cubes. Toss to coat sides evenly. Cover and chill for 4 hours or overnight. 3. Meanwhile, prepare Dipping Sauce. Cover and set aside. 4. Thread pork cubes on skewers. Broil 4-5 inches from flame for 15-20 minutes or until well done. Serve immediately with the Dipping Sauce. Dipping Sauce: Combine 1 tablespoon brown sugar, 2 tablespoons peanut butter, 1/2 teaspoon crushed red pepper, 1 clove garlic, minced or pressed. Stir in 1/2 cup soy sauce. Pour through strainer into serving dish or pitcher. For 2 servings: Half of the ingredients. For 8 servings: Double the ingredients. |
