SAUTE CHICKEN & MUSHROOMS 
1 broiler fryer (about 3 lbs.)
1 tsp. vegetable oil
1 tsp. butter
1/4 lb. mushrooms, trimmed & sliced
1/4 c. sliced green onions
1 sm. clove garlic, crushed
3/4 c. water
2 tsp. lemon juice
1 tsp. salt
1/8 tsp. pepper
1 tsp. flour or cornstarch

Cut chicken into serving size pieces. Brown in oil and butter in a large skillet with a cover.

Add mushrooms, green onions, garlic, 1/2 cup of the water, lemon juice, salt and pepper; cover. Simmer 45 minutes, or until chicken is tender. Remove chicken to a heated serving platter; keep hot.

Blend flour or cornstarch with the remaining water in a cup; stir into liquid in skillet. Cook, stirring constantly, until mixture thickens and bubbles 3 minutes. Pour the vegetable sauce over chicken; serve at once.
