PUFFED APPLE PANCAKES 
4 tbsp. butter
4 lg. eggs
3/4 c. milk
3/4 c. flour
1 lg. apple, peeled, cored and thinly sliced
1/4 c. dark brown sugar
2 tbsp. lemon juice
Syrup

Melt 1 tablespoon of the butter in each of four small oven safe bowls. In a mixing bowl combine eggs, milk and flour. Stir to blend. Divide the batter among the four bowls.

Toss the apple slices in the sugar and lemon juice. Arrange the pieces over the batter.

Bake in a preheated 425 degree oven until the pancakes are puffed and slightly browned, about 15 minutes. Serve with maple syrup.
