PUFFED APPLE PANCAKE 
6 eggs
1 1/2 c. milk
1 c. flour
3 tbsp. sugar
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 lb. butter
3 sm. green apples, peeled and sliced
3 tbsp. brown sugar

Preheat oven to 425 degrees. In blender or bowl, mix eggs, milk, flour, sugar, salt, cinnamon, and vanilla. Melt butter in 9x13 inch Pyrex baking dish. Place apple slices in buttered dish in even layer. Return to oven until butter sizzles, being careful not to let butter brown. Pour batter over apples, sprinkle with brown sugar. Bake 20 minutes. Serves 4 to 6.
