DAVID'S BRILLIANT COOKIES 
4 1/2 c. sifted flour*
1 tsp. baking soda
1 tsp. cream of tartar
1 c. butter (no substitutes)
1 c. canola oil
1 c. granulated sugar
1 c. sifted powdered sugar*
2 eggs
1 tsp. vanilla
1/4 tsp. nutmeg
extra sugar (set aside)

*Measure flour and powdered sugar after sifting.

Sift together flour, baking soda, and cream of tartar. Set aside. Cream together butter, canola oil, granulated sugar and powdered sugar in a mixing bowl until light and fluffy. Add eggs, one at a time. Beat well. Blend in vanilla and nutmeg. Gradually stir dry ingredients into creamed mixture. Drop mixture by rounded teaspoons (or use a mini ice cream scoop) onto greased baking sheets. Flatten each with the greased (any cooking spray works well) bottom of a glass dipped in extra sugar.

Bake at 375°F for 7-9 minutes or until lightly browned around edges.

Makes about 5 dozen cookies.

NOTE: Use a glass with a textured bottom to flatten cookies for a pretty design.
