ONE PAN CHICKEN AND WINE DELIGHT 
2 (2 1/2 lb.) broilers cut up and skin removed
1 doz. medium onions
1 doz. small potatoes
2 sticks (1/2 lb.) butter
Garlic powder
Oregano
Salt and pepper (freshly ground pepper is better)
1 (16 oz.) can tomatoes, strained
1 pt. Taylor's sherry wine
1/2 pt. water

Preheat oven to 325 degrees. Place the meat in the bottom of a roasting pan. Arrange onions and potatoes on top of meat. Cover generously with garlic powder and oregano. Slice butter over the top. Add salt and pepper to taste. Pour wine over all and add water.

Cover and bake two hours. Remove cover and add strained tomatoes, using only the pulp. Sprinkle pulp over top and bake 30 minutes more, uncovered. Check once during cooking, add a little more water if necessary.
