GREEN CHILE STEW (LOW SODIUM) 
1/2 lb. lean pork, cubed
10 garlic cloves, sliced
1 tbsp. chipotle, crushed
1 lb. fresh or frozen mild green chile
4 - 6 potatoes, washed and cubed
grated yellow cheese

Heat a large saucepan, add oil, and cook garlic until tender. Add pork cubes and cook and stir until no longer pink. Add chipotle, chile and potatoes, and cover with water.

Bring to boil and simmer until potatoes are tender. Allow to sit at least 30 minutes, so flavors can blend.

Serve hot. Those who like salt can add it; top with grated cheese, if desired.
