HIGHLAND HOT POT | |
1 1/2 lbs. lean bottom round 3 tbsp. flour 1 1/2 lb. link sausages 4 med. potatoes, peeled and sliced 1/4-inch thick 2 apples, peeled and sliced 1/4-inch thick 1 onion, peeled and sliced 1/4-inch thick Salt and pepper 1 can (1 pt. 2 oz.) tomato juice (about 2 c.) 3 beef bouillon cubes Pinch of sage Cut bottom round in cubes and dredge with flour. Cut sausages in half. In a 2-quart casserole put half of potato, apple and onion mix. Add meats, then remaining vegetable mixture. Sprinkle each layer lightly with salt and pepper. Heat tomato juice and dissolve bouillon cubes in it. Add sage. Pour over ingredients in casserole. Cover and bake in moderate oven (350 degrees) about 2 hours. Makes 4-6 servings. |
