PINEAPPLE UPSIDE-DOWN CAKE 
2 tbsp. melted butter
1/2 c. brown sugar
sliced pineapple, well drained

Prepare one egg cake batter. Cover the bottom of shallow cake pan with waxed paper. Cover with melted butter, brown sugar and a layer of sliced pineapple. Pour in batter and bake in a moderate oven (375°F) 30 minutes.
