MAINE BLUEBERRY CAKE 
3 c. flour
1 c. sugar
2 tbsp. baking powder
2 tsp. cinnamon
1 tsp. salt
2 eggs
1 c. sour cream
1/2 c. butter, melted

Combine flour, sugar, baking powder, cinnamon and salt in a large bowl. Gently fold in blueberries. In a small bowl, beat eggs, sour cream and melted butter. Add to flour mixture and stir. Spread batter in a greased 13 x 9 x 2 inch pan. Slightly beat 2 egg whites and brush on top of batter. Then sprinkle granulated sugar on top and bake at 425 degree for 30 minutes or until done. Cut in squares and serve alone or with vanilla ice cream.
