STRAWBERRY - SPINACH SALAD 
2 tbsp. strawberry or cider vinegar
2 tbsp. strawberry jam
1/3 c. corn or soy bean oil
8 c. torn spinach
3/4 c. coarsely chopped macadamia nuts or pecans
1 c. fresh strawberries, halved
3 kiwi fruit, peeled & sliced

For Dressing: Combine vinegar and jam in a blender container or food processor. With motor running add oil in a thin stream until well blended.

In a large bowl, combine all of the spinach, half the nuts, half the strawberries and half the kiwi fruit. Add dressing and toss. Spoon into individual salad plates or into large salad bowl. Top with remaining nuts, berries and kiwis.
