BANANA NUT BREAD 
1/2 c. (1 stick) shortening (Crisco)
1 1/2 c. sugar
2 eggs
1/2 c. buttermilk
1 tsp. vanilla
1/3 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 c. all-purpose flour
2 very large or 3 medium very ripe bananas, mashed thoroughly
1/2 c. (or more) finely chopped pecans

Cream together shortening and sugar. Mix in eggs, buttermilk and vanilla. Stir in salt, baking soda, baking powder and flour. Add mashed bananas and mix well. By hand, stir in nuts. Grease and flour two loaf pans or 1 Bundt pan.

Bake at 350°F for 45 minutes.
