PEANUT BUTTER CRISPIES 
1/2 c. butter, softened
1/2 c. sugar
1 egg
1/3 c. crunchy peanut butter
3/4 c. flour
1/2 tsp. baking soda
1/2 c. chopped dry roasted peanuts

Beat butter and sugar until fluffy. Beat in egg and peanut butter. Mix in flour and baking soda. Roll dough into a ball and refrigerate 2 to 3 hours. Roll dough into 1 inch balls and flatten with bottom of glass. Sprinkle with peanuts. Bake at 350 degrees until light brown, 12 to 15 minutes. Cool on rack. Makes about 2 dozen.
