CHICKEN CACCIATORE 
1 quartered broiler, cut into parts
3 tbsp. olive oil
1/2 lb. mushrooms, sliced
1 med. onion, chopped
1 lg. carrot, shredded
1 rib celery, chopped
1 clove garlic, crushed
1 (1 lb. 12 oz.) crushed tomatoes
1 tbsp. chopped parsley
1/2 tsp. oregano
1 tsp. salt
1/4 tsp. pepper
1 bay leaf
1/2 c. sherry (optional)

In large frypan, place oil and fry chicken 10 minutes. Remove chicken from pan. Saute the mushrooms, onion, carrot, celery, and garlic for 10 minutes. Place chicken back in pan and add the remaining ingredients. Simmer 30 minutes or longer. Serve over spaghetti. Serves 4.
