PASTA WITH LEMON, OIL AND
TOMATOES
 
4 tbsp. olive oil
Juice of 1 lemon
4 scallions, chopped
Salt and coarse pepper

6 ripe tomatoes, blanch in boiling water and peel, chop coarsely
1 bunch chopped basil

Boil 1 pound spaghetti and drain. Pour on olive oil mixture - toss. Add the tomatoes and basil and grated cheese on top.
